K-16 Space & STEAM (Science Technology Engineering Art Math) education mission
K-16 Space & STEAM education will initially focus on preparing space food for astronauts usingdehydration, fermentation and freeze dried preservation methods. Students will learn about developing sustainable food systems for humans on earth and astronauts in space. The “Out of this World” innovative program will underscore the fundamental importance of healthy food for human survival, whether on Earth or Mars. This will be an amazing education experience for youth, teachers and parents.
Exposure to space, science, technology, engineering, art and math education beginning at the tender Kindergarten school age to undergraduate college provides the necessary introduction to these fascinating college and career pathways.
Space Food Science with Daphne: Cooking with Science Technology Engineering Art & Math (S.T.E.A.M.)
Space Food Science with Daphne is an “out of this world” education experience that will keep students, teachers, parents and community member participants engaged in learning about healthy eating on Earth and on NASA’s International Space Station (ISS). The focus of will follow NASA’s mission to learn how to live an work on Mars; SpaceX’s Polaris Dawn’s mission to conduct scientific research designed to advance both human health on Earth and our understanding of human health during future long-duration spaceflights; and Blue Origin’s efforts to fly astronauts to space on New Shepard while building next-generation space habitats, and returning to the surface of the Moon. All of the endeavors require Space Food. A healthy diet is a MUST on Earth, during civilian spaceflights, and will be for humans living and working on Mars.
10 years ago, on September 4, 2014, I embarked on a journey to become a master food preserver with a mission to provide space food to astronauts. This has been my BIG DREAM for the Lee family legacy my grandmother Ethel Lee started while building NASA Space Shuttles for Rockwell International, in Downey, CA. My mission is to partner with the NASA, Elon Musk’s SpaceX and Jeff Bezos Blue Origin. I earned my certification from LA County’s Master Food Preserver Program. Throughout this 10 year journey, I have gained extensive knowledge and practical experience in food preservation techniques, with a special focus on dehydrated, fermented and freeze dried foods.
